Menu Monday

Today is lacking a bit with the holiday and everything. But I feel like I've been cooking up a storm!


Jalapeno Brats & homemade french fries

No picture. I forgot. I was starving and we had to eat dinner pretty quick because J had somewhere to be. The brats were from a local farmers market and were very spicy. They were good, but I don't think I'll buy them again. I'd rather enjoy my dinner than gulp down a bunch of water the entire time because my mouth is on fire.



I can't remember for the life of me what we ate Tuesday. That's what happens when you don't take pictures. J can't remember either. #fail

4th of July

Thursday was July 4th and I made 4 different dishes. It was a busy Wednesday.
You definitely need to check out all four of these. DELICIOUS!!

I didn't even get a picture of the cobbler!

The desserts were delicious and gone before any other dessert! I was pretty proud of myself. I felt bad because when my dad couldn't wait to have blackberry cobbler. By the time he was done eating it was gone! So I halved the recipe and made him a little one. Well, it didn't work out too well. I should have put it in two different ramekins instead of one. It still cooked and tasted good but was a mess!

The first is Cilantro Lime Chicken Tacos. We've never had these but I tasted the sauce after I made it and it was delicious. It's so easy too! The hardest part is cooking the chicken--which I'm horrible at doing. I ended up cooking it on low/med for about an hour and made sure there was always water in the skillet. It kept the chicken quite moist. Once it was done I bagged the chicken and bagged the dressing (separately--read instructions carefully) and popped it in the freezer!

On Sunday we had J's brother and friend over for dinner. I made meatball sub casserole again (J loves it) and made a ton of meatballs to keep frozen. I made extra last time but we ate them with the spaghetti last week. I have enough for about 4 meals now. Wahoo!

I think it's about time we get a deep freeze. Our freezer if filling up already!
